Hello! We are El Patronato por la Cocina del Callao, a non-profit civil institution formed by gastronomic entrepreneurs and cultural promoters of the first port. Peruvian cuisine owes much to the port of Callao, where Spaniards, Arabs, Africans, Greeks, Italians, Chinese and Japanese fused their customs with those of the local population, giving us a first class cuisine.
